UPDATE:
Betty let me down. Okay, the meatloaf itself was good. It was a much different recipe than I normally bake, so it was interesting to try. However, there are 2 things that need to be done differently in the future.
1. Suggested bake time was 8-10 hours. Unfortunately, 10 hours later it wasn't cooked through. Not even close. This was 8:00 p.m. So, I had to put it in the Speed Bake oven and 30 minutes later it was cooked, although too crispy on the outside.
2. The carrots in the bottom of the Crock Pot would have done their job perfectly had I chosen a leaner beef. As it was, I chose cheap ground beef. There was WAY too much grease in it. Like meatloaf grease soup. Not good.
So, if I make this again (and I will probably try it again to see if I can get it right) I will use lean beef and start EARLY in the morning to make sure I have enough time.
And now you know the rest of the story.
Meatloaf in a Crockpot? You heard right, ladies and gentlemen. This is yet another recipe from this cookbook. I have never made this before (or any meatloaf in the Crock Pot) so forgive me if it is horrible. I blame Betty.


Then, put the meatloaf into the Crock Pot. If you want, add 4-6 peeled and chopped potatoes to the sides of the Pot.
AFTER putting this in, I read a little tip about making aluminum foil "handles" to help get the finished product out of the Pot. But that was AFTER. So I will just be cutting and serving this straight from the Pot.
Cover and cook on low 8-10 hours.

Then roll up your sleeves, take off your rings, and start mixing! Mixing with your hands is best if you don't mind the raw meat under your nails. This is a new experience for me as I have been growing out my fingernails. Anyway. Where was I?
I did add one little step to this. When I bake meatloaf, I put a layer of baby carrots in the bottom of the pan so the meat doesn't just sit in its own fat and get greasier than it needs to be. I did the same for this recipe. Don't know how it will turn out, but it seemed like a good idea.

Oh, I love meatloaf. Yes, be sure and post how it is. It looks really good.
I rarely cook meatloaf. Only when I am in the mood for meatloaf sandwiches. Because no one here likes it. But...this looks good...and easy. So...yes, a verdict would be lovely!
