I also had 1/2 lb. of leftover sausage that I fried up.
Boil 12 ounces of rigatoni according to the package (about 12-15 minutes.)
Layer the ingredients in your Crock Pot in this order. 1/2 jar of spaghetti sauce.
1/2 of the cooked rigatoni.
1/2 of the hamburger/sausage mixture.
1 1/2 cups of shredded mozzarella cheese.
I use Italian Seasoning in just about everything and this was no exception! I sprinkled some onto the cheese on both layers.
1/2 of a can of sliced mushrooms and 1/2 of a small chopped onion.
Repeat each layer. I was feeling rebellious so I added another 1/2 cup of cheese to the very top along with another sprinkle of Italian seasoning.
Cook 4-5 hours on low in your Crock Pot. (This is 5 hours later.)
LOVE IT! This is the best "new" dish I have made. I will make 2 changes the next time I make it.
1. I will add AT LEAST another 1/2 of a jar of spaghetti sauce. It was a little dry.
2. I will probably add a little ricotta cheese to the layers to make it a bit creamier.
This recipe makes A TON so we will be having leftovers tomorrow. Hubby is happily eating his second plate full. Kids will try it out tomorrow. All in all, I highly recommend it. It was easy, delicious, and very filling.
